Rustic farm-to-table cuisine is the name of the game at The Dabney, an intimate spot in Shaw with a wood-burning hearth commanding the open kitchen and brick-walled dining room. Chef/owner Jeremiah Langhorne creates seasonal menus highlighting mid-Atlantic regionality in dishes like chicken liver and foie gras parfait, Chesapeake rockfish with sunchokes and littleneck clams and vegetal-inspired desserts like celery ice cream or green chartreuse yogurt mousse. The bar showcases craft beers and cocktails, like the Apium (gin, dry vermouth, celery, lime, sugar, whey), and a strong list of French and Old World wines.
