Culinary gardens and an elegant farmhouse interior, replete with long communal tables and brick walls, greet guests at The Corson Building, an intimate farm-to-table spot in Georgetown. Here chef-owner Matthew Dillow (also of Sitka & Spruce and Bar Ferd’nand) supplies many of the ingredients from his own farm. Family-style dinners are served four times a week (plus prix fixe menus on Saturday and Sunday), showcasing local cuisine like roasted black cod accompanied by morels, pea tendrils and bacon sorrel sauce or deep-fried oysters with fiddlehead tartar.
