From James Beard Award-winning chef José Andrés, Jaleo in the Cosmopolitan features modern takes on traditional Spanish cuisine via an open-air paella kitchen and wood-fired grills. Tapas and small plates feature ingredients like grilled octopus, Iberico pork or fire-roasted red peppers, alongside a chef’s tasting menu. The drink program showcases numerous sherries and Spanish wines, including a selection of unfiltered wines as well as sangrias and cocktails. Jaleo's space features a geometric-tiled ceiling, gold pendant lights and bright, bold shades of red.
