Cafe ArtScience merges avant garde, New American cuisine with gastronomical innovations. This lively Kendall Square restaurant and cocktail bar features a modern, all-white interior with a centrifuge at the bar and a kiosk where diners can taste the latest tech innovations in food. French-inspired dishes include grilled Spanish octopus and lamb cotechino, seared foie gras with parsnip pancakes or flat iron steak with green garlic pomme purée. Garnering a James Beard nomination for Outstanding Bar Program, Todd Maul creates cocktails like the Burnt Cherry Wood Old Fashioned (sugar cubes melted on top of a charred orange and cherry, a blend of bourbons, then chilled with negative-40-degree ice).
